Ingredients
  

  • 1 cup zucchini, peeled and chopped Small, raw.
  • 1 medium banana, ripe
  • 1 small apple, cored and chopped
  • 2 teaspoons lemon juice
  • 1 cup almond milk, unsweetened Or any milk of choice.
  • 1/2 cup spinach, fresh Optional.
  • 1 teaspoon honey or maple syrup Optional, for sweetness.
  • 1/2 cup ice cubes About 6-8 cubes.

Equipment

  • 1 Blender
  • 1 Paring knife
  • 1 Measuring cups and spoons
  • 1 Vegetable peeler
  • 2 Glasses for serving

Method
 

  1. Wash and peel the zucchini. Cut into small pieces for easier blending.
  2. Peel and chop the banana. Core and chop the apple.
  3. Add zucchini, banana, apple, lemon juice, almond milk, and spinach (if using) to the blender.
  4. Add honey or maple syrup if you like your smoothie sweeter.
  5. Add the ice cubes.
  6. Blend on high until smooth and creamy, about 60 seconds. Scrape down the sides if necessary and blend again.
  7. Taste and adjust sweetness or add a splash more milk for a thinner consistency.
  8. Pour into glasses and serve immediately.

Notes

Zucchini is mild and easily disguised by fruit, making this smoothie great for picky eaters.
You can freeze the banana for an even creamier texture.
For extra protein, add a scoop of protein powder or Greek yogurt.
Store any leftovers in the fridge for up to 12 hours, shake or stir before serving.
