Ingredients
  

  • 1 cup pumpkin puree About 240 grams.
  • 1 cup unsweetened almond milk Can substitute with coconut or dairy milk.
  • 1/2 cup plain Greek yogurt Use plant-based yogurt for a vegan version.
  • 1 medium banana, ripe Slice and freeze for extra creaminess.
  • 2 tablespoons maple syrup or honey Use as preferred for sweetness.
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 cup ice cubes About 120 grams, or 8 cubes.

Method
 

  1. Add the pumpkin puree, almond milk, Greek yogurt, banana, maple syrup (or honey), pumpkin pie spice, vanilla extract, and ice cubes into the blender.
  2. Blend everything on high speed for about 1–2 minutes, until smooth and creamy.
  3. Taste and adjust sweetness or spice as needed.
  4. Pour into two glasses and serve immediately.

Notes

For extra creaminess, use frozen banana instead of fresh.
You can substitute coconut or dairy milk for almond milk.
Top with a dollop of whipped cream and a sprinkle of cinnamon for a dessert-like touch.
Make it vegan by using plant-based yogurt and sweetener.
