- Peel the cucumber and chop it into chunks. Core and chop the apple.
- Add cucumber, apple, yogurt, lime juice, mint leaves, and cold water to the blender.
- Blend on high speed until smooth, about 1 minute.
- Taste and add honey or maple syrup if you’d like extra sweetness. Blend briefly to combine.
- Add ice cubes and blend again until smoothie is frothy and chilled.
- Pour into glasses and serve immediately.
Notes
For a vegan version, use dairy-free yogurt.
You can substitute mint with fresh basil for an herbal twist.
Add a handful of spinach for an extra nutrient boost without compromising the fresh flavor.
If you prefer a thinner smoothie, add more water.
